Looking for a great side dish to bring to your Mem Looking for a great side dish to bring to your Memorial Day cookout or summer BBQ? This red potato salad with hard boiled eggs is just the thing. It’s SO creamy, packed with flavor and the eggs really take it up a notch. I always use @egglandsbest eggs - they are higher in Vitamin D, E, B12 and Omega-3s and lower in saturated fat than ordinary eggs.Creamy red potato salad with hard boiled eggs3 lbs baby red potatoes, quartered6 Eggland’s Best eggs1/2 c mayonnaise1/2 c sour cream1 Tbsp dill pickle juice3 celery stalks, diced1/4 c red onion, diced6 slices bacon, cooked and crumbled2 tsp salt1 tsp black pepper1/4 c green onions, diced1/3 c fresh dill, choppedPlace the potatoes into a large stockpot, cover completely with water and bring to a boil. Reduce heat and simmer for 20 minutes, or under the potatoes are tender.Place the eggs in a second pot and cover with water. Bring to a boil and then immediately turn off the heat, cover the pot and let sit for 12 minutes. Drain and place eggs in an ice bath to cool. Once cooled, peel eggs and dice into large pieces.Mix together the mayonnaise, sour cream, pickle juice, salt and pepper. Stir until smooth.In a large bowl, add the potatoes, red onion, celery, bacon, hard boiled eggs and dill. Pour the mayonnaise mixture over top and gently mix all the ingredients together.Top with green onions and extra bacon and hard boiled eggs (optional). So many cozy spots to relax or work throughout the whole hotel, a calming outdoor courtyard with a little waterfall, indoor and outdoor pools (the outdoor pool has a full service bar and cabanas), fully equipped fitness center, several onsite restaurants, hiking trails and more. The way this show has a hold on me….I saw @hades The way this show has a hold on me….I saw @hadestown on Broadway three years ago and I have been obsessed ever since. A modern retelling of two Greek mythology stories, heavy New Orleans jazz influences and a band that plays on stage and makes you feel like you’re sitting at a bar listening to the house band and hearing Hades tell the story.One of my favorite things about the show is that it leaves room for each actor to bring something unique to their character. It will never be the same show twice and each cast is as amazing as the last. Another benefit to seeing it multiple times is that it gives you the opportunity to notice something new every time.I liked how the national tour adapted the set for smaller stages and to give you the same feel for the story without the turntable and lift. And I was thrilled to see there are swinging lamps too - they’re one of my favorite parts. Hadestown is only at the Ohio Theatre through Sunday and there are a very limited amount of tickets available. I try to shop with small businesses as much as I can and whenever I’m able, I opt for buying local. What better way to support local businesses and makers than around the holidays?! It’s always fun to be able to gift a little bit of Cbus to those you love. I’ve put together a list of some of my favorite local artists and businesses in Columbus to help you as you do your holiday shopping. I also recently attended the Ohio Creative Collective Handmade Holiday Gift Guide Release Party at Bleu & Fig. I was already working on this Columbus gift guide, but the event helped me round out my list.
